So who is this Garry dude and what is Ib's realtionship with him?
tl;dr
She really hasn't know him for very long, just the time they spent in the gallery. Still other than her parents he is the person she loves and trusts the most. A lot of that has to with them being in a life or death situation where the only thing they can rely on is each other, yes.
But Ib is from a wealthy upper class family, which the creator tried to get across in how they dress, so she always had tutors who demanded a lot from her and her parents had high exceptions of her too. At the same time they always praised her for being so quiet and well behaved. She never argued or caused any trouble for anyone. She followed every instruction and rule to the letter because it pleased them and she really wanted to make them proud.
Nothing makes her happier than when her parents are proud of her. There's no resentment towards them she really loves them a lot and spends a lot of her free time with her mother.
Since she's never attended school she's had little opportunity to make friends in her own way. Most kids she does meet just think she's boring because she never breaks the rules and is unwilling to push boundaries, she'll tells them not to either because you don't want to get in trouble! Or have adults get mad at you.
If they were going to be that way she didn't have much desire to associate with them either.
And then she met Garry.
Garry was always gentle and understanding with her. He was there for her and even though he's twice her age he needed her too. He usually talked like he had a duty to protect this little girl. He did protect her the best he could but without her he also wouldn't have made it as far as he did. He was dying when she first met him, and if they hadn't stuck together he would have gone insane and spend the rest of his life sitting around talking to himself.
The most important thing though is that he never pushed her or expected anything of her. At the same time he complemented her for being brave and smart. He always told her to take her time and it was okay if she was scared. She didn't have to hide her feelings. For probably the first time someone was telling her these things. She didn't have to try to be the perfect little girl she could just be... herself.
That's when she started really wanting to be with him and just talk to him. They started talking about things other than the gallery and what they should do next. Learning simple things about each other. And so they bonded and she trusted him to the point that she didn't accept his death because the last thing he said to her was a promise to come running if she called and that they'll leave together.
Short Version: What Garry is to Ib is her first best friend and a positive influence. When she sees her parents again she'll be asking for things to change.

Ib loves her mother very much. They're actually pretty close. And Ib tries to emulate her in a lot of things. And tries to like the same things she does. Just generally looks up to her as a model of everything a lady should be. She's still at an age where she can't see any flaws in her parents.
Her mom has high expectations of her though, she's always trying to push Ib to be better so Ib worries about disappointing her. If she has a problem she tries not to go to her mother with it unless she really really has to because it is super important. Instead she tries to work it out herself or maybe ask her father if he's available. He's not as difficult to impress.
The few times she had gotten in trouble usually for things like soiling her clothes or not cleaning up after herself or not taking her studies seriously have resulted in a serious scolding. Something she never wants to repeat so she's always careful to listen to her mom and follow the rules.
Which is why during the "good" ending she has a real conflict about who to go with, Garry or her (fake) mom.
